CHABLIS cuvée 1975

This Cuvée is elaborated from a plot selection in Préhy. The vines were planted in 1975 by Celine’s father, and cover 2 ha.

1975 is also a special year for Céline and Frédéric, as, for both, it is their birth year.

 

 

TASTING

 well-balanced and slightly racy. It reveals notes of 

lemon, quenette and white flowers associated with discreet hints of white 

peach, limestone/minerality (terroir) as well as an imperceptible hint of 

almond. The palate is fruity, well-balanced, silky, racy, aerial and offers a 

slight acid frame, a slight unctuosity, minerality, gourmandise a swell as 

a beautiful finesse. In the mouth this wine expresses notes of ripe yellow 

peach, apricot and slight touches of quince, ripe Williams pear associated 

with a discreet hint of lemon, clementine as well as a very discreet hint of

        WINE MAKING

  • Natural yeast.
  • Direct pressing, cold settling. Controlled fermentation temperature (16-18 ° C) for the tank 
  • Alcoholic fermentation and malolactic completed
  • Aged for a year on the fine lees. 
  • Collage and filtration before bottling. 
  • Thermoregulation allows fermentation at low temperature in order to develop the flavors. The wine is 100% stainless steel tanks to preserve freshness and fruitiness of the wine (about 10 months). 
  • Bottled by us at the Estate.

The Gueguen family is based in the hamlet of Préhy, just 7 km south west of Chablis. The winery was created in January 2013. Céline and Frédéric both worked for large wine estates in Chablis for 15 years before setting up their own domaine. They sincerely plan to respect

the tradition and the fragility of the terroir. All of their cultural techniques aim at taking care of the environement and preserving the aromatic complexity of their wines. They are passionate about sharing their knowledge to visitors, and have set up a guesthouses in their vneyard.
